Six Courses of Wonder: Why Mad Hatters at Six by Nico Is Fine Dining at Its Best

Tucked away in Canary Wharf, Six by Nico isn’t your average tasting menu spot. Every six weeks, the entire experience transforms theme, menu, everything. And this time, they’ve taken a dive down the rabbit hole. Welcome to Mad Hatters: a surreal and theatrical journey that turns fine dining into a little bit of magic.

It all starts with what looks like a garden on a plate. A swirl of goat’s cheese, jewel-bright beetroot, edible flowers and tiny spheres of flavour that burst on your tongue. It’s playful and precise, finished with a dramatic pour of consommé right at the table. That balance of theatre and skill sets the tone for the night.

Then comes the “receipt” an actual printed slip, tucked over a beautiful cut of black pollock with bacon, black pudding, and egg yolk jam. This one’s called Breakfast in Disguise, and it’s an absolute masterclass in savoury depth. You’re halfway between a diner dream and a Michelin kitchen.

The rabbit croquette that follows is all crunch and comfort, paired with pickled carrot and a creamy hit of tarragon. And just when you think you’ve got your bearings, out comes a glass teapot. Inside? A deeply aromatic broth poured over a savoury shortcake layered with truffle mousse. Earthy, rich, and so unexpected it’s one of the boldest dishes on the menu.

The main event is all elegance: lamb shoulder glazed in mustard, with silky potato terrine, curry sauce and baby onions. There’s a lot going on, but it all lands. Every bite builds on the last.

And yes, there’s dessert technically two. First, a cheesecake with hibiscus and strawberry sorbet that’s as light as it is luscious. Then, just as you’re sipping the last of your cocktail, out comes a tiny treasure chest of Linzer biscuits, served over smooth white stones. It’s like falling through the final layer of the dream.

The experience runs around two hours, and you’ll want to savour every moment. The staff are sharp, warm, and clearly having fun with the concept too. You can add on the cocktail pairing (and should), which is just as imaginative as the food think smoked teapots and sugar-rimmed martinis.

The bar itself sits right near the front of the restaurant and makes a perfect pre-dinner stop. Think date night energy with a twist.

Mad Hatters is available until August 24, and then it’s gone menu and all. So if you’re in the mood for a little wonder with your wine, this is your sign to book it.
